Humans have been making barbecue pretty much ever since we’ve discovered fire. And who can blame us? Mammoth sushi just isn’t appetizing.

And because barbecue is one of the most basic, versatile cooking methods, it’s also one of the most popular — and one of the most varied. Pick a spot on the globe and it’s a sure bet that they’ve got some kind of crazy regional twist on barbecue going on there. (But we at BBQ Republic humbly insist that ours is, hands-down, the best.)
